I am keeping this post short again as it is the end of the week and I’d like some time to relax. I’m so glad I completed this egg fast. I can’t believe I stuck with it. I was seriously contemplating breaking the Egg Fast and eliminating eggs for my last meal of the day. But, my friend Nick (he will be featured this Summer!) told me to not give up. So I didn’t. Thanks to him, I finished! Thanks, buddy!
I’m not going to put weight measurements in this post today. Please check out Day 1 for the salsa omelet idea.
AM: Bullet Proof Coffee
- 3 Eggs
- 1/3 cup of Nacho Cheese
- 2 tbs Salsa
- 1 100 calorie pack of Wholly Guacamole. (YES, YES, I caved! I confess my sins. It gave me the fat though, right? )
Meal 2: Gyeran Jjim
- None (The Omelette I ate at lunch kept me full until Meal 2)
- 100 ounces (3 liters)
The Gyeran Jjim, a Korean steamed egg dish was the the perfect way to finish the Egg Fast. It was my first time ever making it, and it was quite easy to do. My only wish was that it came with a steaming hot bowl of fluffy white rice and kimchi! I did add the mushroom seasoning I mentioned in my post from Day 3, which made it taste extra delicious. Then I topped with some toasted sesame seeds for added flavor.
Tomorrow, I will start my Intermittent Fasting journey for one full week. However, I will not be chronicling every day. I do plan to post a new recipe this Sunday, so please come back for another visit!
Oh yeah, I forgot to mention this. I lost a total of 5 pounds, right on the dot while doing this fast. I noticed that my tummy has gotten rid of the wheat belly. Overall, I do feel much better, especially my mood. What a difference food can make in what’s going on in one’s head!
