Day 1 Macros

A.M. sanity-stabilizer beverage of choice: Bulletproof Coffee 

Meal 1: Nacho Cheddar Cheese Scramble

  • 3 Large Kirkland Organic Eggs
  • ¼ or 60 grams of Sargento’s Nacho Cheddar Cheese
  • 1 Tablespoon (15 grams) of Kerry Gold Grass-fed Butter
  • About 1 Tablespoon (maybe 12 grams) of scallions

Meal 2: Nom Nom Paleo’s Thai-Style Omelette (Modified)

Thai Style Omelette Prep

  • 1 Tablespoon (15 grams) of Kerry Gold Grass-fed Butter
  • 3 Large Kirkland organic eggs
  • 1 tsp (5 ml) of Red Boat Fish Sauce
  • About 1 Tablespoon (12 grams) of scallions
  • About 1 Tablespoon (8 grams) of cilantro

Thai Style Omelette 2


  • Lemon-Lime Water (2 teaspoons or 10 ml of lemon juice/1 teaspoon or 5mls of lime juice)
  • 1 ounce (28 grams) of Goat cheese
  • 1 ½ ounces or (43 grams) St. Andres Cheese


  • 100 ounces or about 3 liters


When I am “low-carbing,” I start my morning with Bulletproof coffee each day.  It makes me happy.

I ended up not following the meal plan I referenced in my last post because for one, I forgot.  See how forgetful I am? I even forgot to weigh myself this morning, so I set a reminder for tomorrow.  Secondly, I had been craving Michelle Tam’s Thai-Style Omelette from her website, Nom Nom Paleo.  It is delicious and you must try it.  One of my very best friends from California, Jen, sent this recipe to me a while ago and I absolutely love it.  It is tasty and so simple to make!

To keep track of my calories, I use the LoseIt! App and website on my Iphone.  I used to use MyFitnessPal (MFP), but LoseIt is more cost effective for me.  It’s not as prominent as MFP, but they have a pretty sizeable database that helps me keep track of nutritional information and calories similar to MFP.

Because I am constantly worried that I will somehow hurt my internal organs while low-carbing, I drink lemon or lemon-lime water often. Evidently, it helps things like balancing my body’s pH, prevent gall bladder problems (one of my fears!), kidney problems (eek!), etc., Plus there’s the added benefit of having some Vitamin C, which helps my skin stay bright and clear.

The problem I had with this Egg Fast, at least so far today, was the amount of fat I should have eaten. For each egg I consume, I am to eat at 1 tablespoon of fat.  I just couldn’t do it today.  It made me feel ill just thinking about it, so I decided to not pressure myself too much.  But, I will try better on Day 2.

As one can see, not everything I ate is pure and clean or fancy.  I’m not a purist and I like simple stuff.  It’s all good!
